[Cooking] Cake "Truffle"

On a tip from my very good friend I made a cake "Truffle".
This sweetness relished my husband and my father in law. Well, I share the recipe with you.
For sponge cakes:

6 egg yolks
5 proteins
2/3 Art. Sahara
1/2 tsp cream of tartar
2 tablespoons hot water
2 tablespoons cocoa powder
5 tbsp flour for cakes (cake flour)
2 tablespoons starch

For syrup:

3 tablespoons water
2 tablespoons Sahara
1 tablespoon liqueur (I used Kalhua)

For the cream:

150 g of dark chocolate
2 tbsp. cream

For sweets, truffles:

150 g of chocolate
1/3 Art. cream
1 tsp liqueur

200 grams of chocolate for coating sweets and chips

Korzh

Preheat oven to 190C. Draw on vellum 8 circles with a diameter of 20 cm.
Beat the whites with 1/3 Art. sugar to stable peaks.
Egg yolks mix with the remaining sugar and beat until the mixture brighten. Continuing to whisk, add the dissolved in hot water, cocoa.
Sift flour with starch and gently stir in the yolk mass.
Add proteins in 3 stages.
Put the dough into circles drawn (about half a cup each) and smooth spatula.
Bake for 5-8 minutes. Allow to cool and separate the paper.

Syrup

Bring to boiling water with sugar. Remove from heat and add the liqueur.

Cream

It is better to start preparing the cake the day before the assembly. Bring the cream to almost boiling and pour them chopped chocolate. Cool in the refrigerator for several hours (or even better overnight). On the day of the assembly of cake, whip the cream until stable peaks.

Candies

Pour the hot cream chopped chocolate and stir until chocolate is completely dissolved, add the liqueur. Cool in refrigerator for several hours. Gaining a teaspoon, roll the chocolate mass into small balls, put them on parchment paper and set aside in the freezer for 1 hour. Melt the chocolate. Dip each ball in the melted chocolate and leave to harden.

Assembly

Moisten each cake with syrup and cream sandwiched. Cover with cream sides and top of cake. Sprinkle chocolate chips and decorate the candy, truffles.

Lena, in Italy supermarkatah buy cremore di Tartaro. It is worth a penny. I saw in the departments, which sells yeast, flour and all kinds of little things for decorative cakes
